Wuzhen people call drink tea as "eating tea". Smoked bean tea is also known as baked bean tea. The main ingredient is smoked beans. It is cooked in a unique method of Wuzhen.
It is good to choose the bright yellow beans in the autumn, and the sweet bean is better. Fresh night beans are half cooked in light salt water. After being drained, place the beans in an iron sieve, and bake with charcoal fire, until the simmer is scented until the skin of the green beans wrinkles, and the fragrance is in the air. By then, the beans are cooked and not burnt, crispy but not hard, fragrant and delicious, with endless aftertaste. Some other ingredients are also needed, such as sweet-scented osmanthus, fried sesame, orange peel, radish, perilla seed, and fried cedar seeds.
