Wuzhen's century-old wine "Wu Wine", also known as "Sanwu wine", is known as Wuzhen's "Black and white wine" together with Wuzhen's "Sanbai Wine". The term “Wu Wine”originated more than 1200 years ago during the Emperor Tang Xianzong reign of the Tang Dynasty and flourished during the Emperor Ming Jiajing reign of the Ming Dynasty. It is said that during the Anshi Rebellion during Tang Dynasty, the local governor of Wuzhen, Uzan, died in battle for protecting local safety. The local people heard that General Wu was fond of drinking folk Du-brewed wine, but in order to quell the chaos, he did not drink any alcohol. Therefore, they carried out black glazed wine vats and black glazed wine storage jars, and sprinkled the sparkling purple Du-brewed wine on the edge of Shangzhi Pond to form a "river" in memory. According to the historical records, At night, thousands of people from the town gathered in Shangzhi Pond. Black glazed vessels such as vats, jars and cups were arranged in an array. People were like a tide, wine was like a river, sadness was overwhelming, and the fragrance of wine swept over the face.… There was a poem describing the scene: There was no general wearing a cloak and horses, but only the fragrance of Wu Wine are everywhere.
Since 2001, Wuzhen Tourism Co., Ltd. has been exploring, restoring, and utilizing the folk secret recipe of "Wu Wine" brewing technology, and restoring Wu Wine brewed by the traditional craft and raw material (black glutinous rice).
