Wuzhen’s century-old wine "Wu Wine" is also known as "Sanwu Wine", and called the "black and white wine" of Wuzhen together with the "Three White Wine". "Wu Wine" originated from 1200 years ago during the reign of Emperor Xianzong of the Tang Dynasty and flourished during the reign of Emperor Jiajing of Ming Dynasty. Legend says that in the chaos of An Lushan Rebellion in Tang Dynasty, Wuzhen’s Commanding General Wu Zan was killed during his protection the local peace. The local people heard that the general likes the folk brewing wine, but in order to fight the war, he didn’t drink a drop of it. So the locals carried out the wine to be sprinkled into the Shangzhi Pond in memory of the general. Historical materials have recorded: It was at night, thousands of locals gathered by Shangzhi Pool, placing vats, jars, cups and other black glaze vessels in a row. In the floating wine fragrance, people crowded and the wine flowed into a river, carrying their huge sadness…There was a poem describing this scene: I did not see the general’s cloak, but only smell the fragrance of Wu Wine.
Since 2001, Wuzhen Tourism Co., Ltd. has begun to excavate, restore and activate the brewing process of “Wu Wine” with folk secret recipe, and revive this wine brewed with traditional techniques and raw materials (black glutinous rice). “Wu Wine” uses special local glutinous rice as the main raw material, and is brewed by folk techniques through such procedures as rice selecting, soaking, steaming, cooling, fermentating, pressing, aging, freezing, filtrating and filling.
