Tao Xuchang, a native of Wuzhen, founded Xuchang Sauce Garden under his own name in the ninth year of the Xianfeng reign of the Qing Dynasty (1859). It is also the earliest sauce garden recorded in Wuzhen and has a history of over 150 years. The sauce in Xuchang Sauce Garden is made by traditional handmade brewing methods. Every spring and autumn, the soy sauce garden purchases high-quality raw materials such as soybeans and broad beans from neighboring villages and towns. After steaming, they are spread on bamboo plaques, mixed with flour and sauce koji, and then placed in a koji room for koji making. This process takes about 72 hours, followed by natural sun exposure and fermentation for up to six months before it is considered complete. The sauce vats on the drying field of Xuchang Sauce Garden emit a strong sauce aroma, and the sauce produced has a unique taste and is loved by most people.
